Taking my mom’s Tortiere recipe and making it vegetarian with Beyond Meat
PIE CRUST
Box of pie mix (that makes 2 shells)
1/2 cup grated cheddar cheese
1/2 tsp paprika
Prepare pastry mix as directed on package – before adding water and the cheese and paprika and blend with a fork then add the water.
INGREDIENTS FOR PIE
2 packages Beyond Beef
2 small onion (chopped)
1.5 cups dry bread cubes
1 can beef bouillon (beef cube with 1 cup hot water)
12 tsp salt
1/2 tsp pepper
1/4 tsp each – thyme and sage
2 tsps Worcestershire
2 cloves minced garlic
Cook beef, onion and garlic in skillet until meat loses its red colour breaking up meat with fork. Drain off fat. Mix bread cubes and bouillon and let stand a few minutes. Add beef mixture and remaining ingredients. Mix well and pour into pie shell.
Roll remaining pastry and put over top, crimping edges. Bake at 375 for 45 mins
