A great way to use up those ripe or bruised peaches.
- 2 peaches very ripe – skin on but diced small
- 1/2 cup olive oil extra virgin
- 1/2 large lemon squeezed
- 2 tablespoons honey (or more if you like a sweeter dressing)
- 1/2 tsp sea salt

Combine the Sweet Peach Salad Dressing ingredients in a blender or small food processor until very smooth (I use my Nutri-Bullet). Taste and adjust the seasoning, adding more honey or salt as desired. Refrigerate until using
