Dark Chocolate Bark

  1. 1lb dark chocolate (70% – I use 85% but it is more bitter)
  3. 1/4 cup raw pumpkin seeds
  4. 1/4 cup goji berries
  5. 1/3 cup chia seeds
  6. 1/2 teaspoon sea salt (to sprinkle on top)
  8. 1/4 cup roasted almonds (unsalted)
  9. 1/2 cup toasted coconut (unsweetened)
  10. 1/2 teaspoon sea salt (to sprinkle on top)
  1. Line a baking sheet with parchment and set aside.
  2. Chop chocolate into small pieces ad add to glass bowl.
  3. Using the double boiler method (set a glass bowl over a sauce pan with simmering water).
  4. Stir chocolate gently but constantly until fully melted – do not let water boil or touch glass bowl.
  5. Remove from heat and stir gently for 1 minute.
  6. Add the ingredients (seeds, nuts, fruit etc. but not the salt) to the melted chocolate. (see note)
  7. Spread mixture onto parchment lined baking sheet and sprinkle with sea salt.
  8. Refrigerate for up to 3 hours – remove and break chocolate in pieces.
  9. Note: I like to keep a handful of mixture to sprinkle on the top.
