This moist ‘n malty quick-bread brings you the Luck of the Irish on St Patrick’s Day or Any Day!
Spray an 8×8 – inch baking pan with non-stick spray. Set aside.
In a large bowl, thoroughly mix:
- 2 c. whole wheat flour
- 1 c. large-flake oats
- 1/2 c. brown sugar (NOT packed)
- 2 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
You may need to break up lumps of brown sugar as you stir.
Make a well in the centre of the dry ingredients.
In another bowl, combine:
- 1 1/2 c. amber ale
- 1 c. buttermilk (well-shaken)
- 1/4 c. melted butter
- 1/2 tsp. vanilla
- Add to dry ingredients and gently stir just until flour is incorporated.
Pour batter into pan. Over the top, evenly sprinkle:
- 2 Tbsp. large-flake oats
Cooking Instructions: Heat oven to 375F/190C. Bake approx. 40-45 min, OR until browned and a toothpick inserted into the centre comes out clean. Cool on a wire rack before slicing. Delicious with stew, chili, soup. Also nice with cheddar cheese or honey & butter!
