Colourful Quinoa Salad

4 cups cooked quinoa (Tru Roots – cook as per package)

1 can black beans (washed and drained)

1 bunch cilantro chopped

Red onion minced – 1/2 cup

Cucumber chopped – 1 cup

Celery chopped – 1 cup

1 red beet uncooked peeled and minced in food processor with a cup of baby carrots

Dressing – lemon – cumin – minced – olive oil – Add to taste


Toss all ingredients together – serve cold.

For extra fibre sprinkle with Flax seed.
