No-Bake – Nutritious Nibbles

(aka Energy Bars/Balls)

Ingredients

1 cup (dry) oatmeal (I used old-fashioned oats)

2/3 cup coconut flakes (you can toast them – optional)

3/4 cup almond butter (can substitute any nut or seed butter of your choice)

1/2 cup ground flaxseed (I have used wheat germ and it has worked to)

3/4 cup cacao nibs (can substitute with dried fruit, nuts and berries or a combination of all – let your creativity go wild and personalize these)

1/3 cup honey

1 tsp. vanilla extract

Method

Combine all ingredients together in a medium bowl until thoroughly mixed. Let chill in the refrigerator for about 15-30 minutes. Once chilled, roll into balls of about 1-2” (perfect portion size) Store in an airtight container and keep refrigerated for up to 1 week.

Makes about 15-20 Bites.
